In a large bowl, combine the ground walnuts, ground digestive biscuits, powdered sugar, and vanilla sugar. TIP: Sift the ingredients to ensure a lump-free mixture.
Add the apricot jam and rum (or rum extract), then mix until well combined. TIP: If the mixture is too dry, add a little more jam.
Shape the mixture into small balls. TIP: Damp hands will make shaping easier and result in smoother balls.
Melt the dark chocolate over a double boiler or in the microwave, then dip the balls into the melted chocolate. TIP: Use a fork to help drain any excess chocolate.
Place the coated balls on a baking sheet lined with parchment paper, and sprinkle with ground walnuts or chocolate shavings for decoration (optional).
Refrigerate the balls for at least 1 hour to allow them to firm up and the flavors to meld.
Serve the Zserbó Balls as a dessert or packaged as a gift. TIP: Store in an airtight container in a cool place.
